A rich, milk-braised mutton delicacy from Kashmir — subtly sweetened with Sucral

  • Mutton - 1 kg

  • Milk - 1 litre

  • Fennel seeds (ground) - 1 tosp

  • Cinnamon - to taste

  • Black peppercorns - 6

  • Green cardamom - 4

  • Garlic (chopped) - 6 cloves

  • Ginger (chopped) - 1 tosp

  • Cinnamon powder - 1 tsp

  • Cardamom powder - 1 tsp

  • Onions (fried), mustard oil - 1 tbsp each

  • Sugar / SUCRAL - 1 tsp / to taste

Cook mutton along with milk, fennel seeds, cinnamon and black pepper until tender. Add garlic, ginger and cardamoms and cook on low flame. Add cinnamon and cardamom powder. Finish with fried onions, mustard oil, clarified butter and Sucral. Leave to simmer and serve hot.
